Kursleiter Jakob Limacher, ein Quereinsteiger-Bäcker und Fermentista, der mit sortenreinem Getreide und vor allem Dinkel backt, zeigt den klassischen Hefestollen aus buttrigem Hefeteig und geht weiter mit Sauerteig, Dinkelmehl und Teig-Vorstufen. Besonders am Stollen ist, dass er nach dem Backen weiter reift – angeblich schmeckt ein guter Stollen an Ostern am besten.
