"Betriebsorganisation" is a one-day continuing education course run by GKZ, Gastro Kanton Zürich. Instructor Markus Utiger teaches how structural and process organisation can be used deliberately to make the structures and workflows of a hospitality business more efficient. The course is aimed at gastronomy professionals and aspiring managers and is recommended as preparation for the certified head chef programme. Topics include hierarchies, organisational charts, communication and personal work organisation.
